I like one pot meals! Easy. Fast. Done. My girls were recently sick with sore throats and I wanted to make them something nutritious, full of healthy fats and that I knew they would eat. This is a delicious snack or dessert and in this case dinner!
Avocado Chocolate Pudding
Ingredients
- 2 avocados
- 1 banana
- 1/2 cup cocoa powder
- 2 honey
- 2 maple syrup
- 2 melted coconut oil
- 7 flax milk
- tsp vanilla
Instructions
- Add all ingredients to a food processor, or blender and blend until smooth. Scrape the sides of the blending vessel as needed until the mixture is smooth and creamy. Transfer to a small serving dish or a few small ramekins and chill in the refrigerator for 2 hours and up to 2-3 days. It is delicious alone or top with crushed nuts, coconut flakes or edible flowers.
- *Tip. All Johnny Jump-Ups are edible if grown organically. We grow them in our fairy garden and the girls love to pick and eat them. The health benefits are incredible.
I sweetened it with honey because it is full of anti-viral properties and is soothing for sore throats. The honey and the maple syrup can be used interchangeably. So feel free to double up on one and skip the other. If you use all honey then you may need and extra tablespoon or two of flax milk. I topped the pudding off with organic Johnny Jump Ups. As part of the viola tricolor species it contains expectorant properties to aid in the elimination of the respiratory track make it helpful for chest problems including whooping cough, phenomena and bronchitis. It is helpful for asthma, colds and sore throats, constipation and inflammation.

When we built the Fairy Garden we planted Johnny Jumps Ups. I knew they were edible if organic, but that was about it. We’ve been growing them and including them to brighten up the little girls food for years. Hello beautiful chocolate popsicle with purple flowers!

Talk about an easy summer hit. All our little friends have enjoyed picking and eating them too.
But the delightful flower is more than just a pretty face. Included in the species viola tricolor, it may be in fact even more beautiful on the inside than on the out. I did some research to discover some amazing health benefits, and let me tell you the list was exhaustive. The cheerful flower is a powerful antioxidant with purifying properties.
The few that jumped out to me is that it is anti-asthmatic, an expectorant, good for treating eczema and an emollient. The expectorant properties make it helpful for chest problems including whooping cough and bronchitis. It facilitates elimination in the respiratory tract. It is helpful for colds and sore throats. It relieves constipation, improves circulation to aid the heart and has anti-inflammation properties. Tea prepared with the species has been used for rheumatism and gout.
This power house plant blooms from June until August. I’m excited to dehydrate this and keep using it throughout the rest of the year.
