Chocolate Breakfast Cookies

Who doesn’t love a good cookie?  These healthy cookies satisfy your hunger and leave you feeling energetic and clear headed.  Unlike many breakfast foods they are not loaded with sugar.  Instead they are loaded with nutrition and sweetened with banana.  These are easy and last for several days if they last that long in your house.  They feel like such a treat even though they are healthy!  No need to share that fact with your children. 

My girls devour them, making them a perfect choice when I need to get them out the door fast.  But my favorite time to serve them is when we have time to sit down and enjoy them.  They pair like heaven with a cup of coffee.  If I have the time, I’ll use my good dishes and serve myself two with a cup black coffee.  Adults also love them making them a beautiful option for a playdate or visit with a friend.  Everyone will appreciate the decadent flavor with zero guilt.  They are allergy friendly and a safe option for entertaining.  Make for your next morning playdate or for your own family. 

This is what the mixture will look like. Scoop with a tablespoon and roll into balls. Shape the cookies as you want them to look. They won’t spread. I like to shape them in nice round balls and then flatten them a little bit at the top.

Ingredients Method Notes

Ingredients
  

  • 3 masshed ripe bananas
  • 1 cup ground flax
  • 1 cup gluten free flour or another cup of flax
  • ¼ cup cocoa
  • ¼ cup olive oil
  • 1 tsp baking soda
  • ¼ tsp salt

Method
 

  1. Mix up the dry ingredients. Add the wet ingredients and combine. Stir with a spoon or spatula and mix until smooth.
  2. Scoop a table spoon size amount and roll into balls.
  3. Bake at 350° for 10-12 minutes.
  4. Makes 22-24 cookies

Gluten Free Flour Options 
The Essential Life Gluten Free Flour Mixture #3
  • 3 cups brown rice flour
  • 1 cup tapioca flour
  • 2 cups ground flax 
Any 1 for 1 gluten free Baking Mix such as Bob’s Red Mill or King Arthur
Here they are about to go in the oven.

The Essential Life was born out of my experiences as a mother who had her three children in 22 months. Finding out at four months old that my first daughter needed four hip surgeries in her first year of life and having food allergies impacted our lives tremendously. She learned to walk only four months before her twin sisters were born and was yet to be able to walk up the stairs on her own when they arrived. She often would walk around with a nursing pillow, holding two dolls saying “Now mommy can only carry two babies.”

I stayed home to be with them but never left running my business. With hiring, rearranging and working in the in-between times I managed to "have it all". My systems are based on reflection, research and trial and error.

My mission around here is to offer my systems, philosophies, recipes and stories to inspire you, but also prompt you with questions and ideas to help figure out how to live your Essential Life. I want to help you solve some of your problems and when you leave this site you’ll walk away with a sense of power and satisfaction.

The Essential Life was created to help you waste less time, energy and money on the things that don’t matter and empower you to take control over your small daily choices. Because how we spend our days is ultimately how we live our lives.
